2/15A trip to Victoria’s Yarra Valley would hardly be complete without stopping by one of the region’s renowned wineries. Visitors will soon be able to spend more time at the award-winning Levantine Hill Estate when the Levantine Hill Hotel opens in October 2025. The two-storey property, which overlooks abundant vineyards, shares architectural DNA with Hobart’s MONA (Museum of Old and New Art) by way of design firm Fender Katsalidis. Guests can take in the serenity of the surrounding mountains from the comfort of each room’s private balcony – glass of chilled estate Chardonnay in hand – while those staying in Optume and Premium suites have deep-soaking circular tubs to sink into.

8/15Australia’s first 25hours hotel – 25hours Hotel The Olympia, at the heritage-listed site of the former West Olympia Theatre in Sydney’s Paddington – will retain many of its original architectural elements, from exposed brick to the white-washed facade (with a fresh lick of paint, of course). A cinematic charm runs throughout, with themed concept suites inspired by classic film character archetypes such as “Renegade” and “Dreamer”, while all 109 rooms are furnished with colourful and exclusive artworks by local artist Kubi Vasak. On the ground floor you’ll find an English coffee house, bakery and restaurant but the real showstopper is Monica, a cocktail bar on the rooftop that offers sweeping views of the city.

The Hannah St Hotel, Vic
9/15The Queensbridge Building’s lap pool has always had serious appeal with its striped tile floor, glass ceiling and curtains of greenery that frame an impressive outlook of the city. Until now it’s been the exclusive domain of the 62-level tower’s residents but will become accessible to guests of the Hannah St Hotel when it opens in this year. Set to span 10 levels, the property will also offer access to a gym, co-working spaces, soundproof podcasting rooms, a bar and a restaurant that extends onto a sun-bathed terrace. Designed by Flack Studio – the creative team behind Ace Hotel Sydney – the interiors draw inspiration from Southbank’s industrial heritage, seen in the frequent use of brass, steel and stone.

Mondrian Gold Coast, Qld
10/15Get a taste of the Mediterranean just moments from Burleigh Beach with the opening of the 208-room Mondrian Gold Coast – the lifestyle property group’s debut in Australia. 12/15In another first for Australia’s hotel scene, a local Andaz outpost will soon open its doors on the shores of the Gold Coast, occupying floors six to 21 of a 65-story tower on Broadbeach Island. Alongside three dining options, there are plans for an expansive outdoor pool deck on level six complete with a cocktail bar, beach club and al fresco dining. With soaring ceilings, neutral palettes of bone and white, as well as plenty of mature tropical trees, you’ll see the property in its best light no matter the time of day.

Sea Sea, NSW
13/15On a quiet stretch of the NSW coast some 45 minutes drive north of Port Macquarie, Sea Sea is a newly opened '70s-chic retreat in Crescent Head. There are just 25 rooms and all embody the town’s laid-back surf culture, exemplified in works by late surf photographer Peter Crawford and retro-patterned bed linen. Spend your time lazing by the pool, hire a longboard or indulge at the onsite restaurant, helmed by a former Icebergs chef.

The Tamborine, Qld
14/15Just an hour’s drive from Brisbane and only half an hour from the Gold Coast, The Tamborine offers a modern twist on a traditional mountain escape. Despite being nestled in the hinterland, the 23-room property celebrates coastal living with its pastel hues and light, airy interiors (though glimpses of the dense rainforest creeping around the escarpment reminds you of where you are). 15/15If anything could enhance the allure of the Whitsundays, it’s the addition of a new 39-cabin eco retreat. Hook Island Eco Lodge, expected to open in 2027 on the island of the same name just off the coast of Airlie Beach, embodies the essence of a tropical paradise. Harnessing biophilic design principles such as natural light and organic materials, the property has been designed to blend seamlessly into the rainforest surroundings.
Two pools have also been proposed – one that overlooks the lapping Pacific – as well as a sauna, cold plunge area, yoga pavilion, an all-day restaurant, bar and a lounge deck overlooking Hook Passage. The lodge will also cater to families, with the onsite Kids Adventure Club leading activities that encourage exploration of the island's natural wonders. A clifftop fine-diner with sweeping views of Stingray Bay is set to become the property’s crown jewel.
